It was one of the quickest recipes I’ve ever cooked. It only took about 15 mins and it was snapped up in seconds. This calamari recipe serves 2. Here’s how I made it!

Cooking for 2 people, I took 2 squids. I cheated a little and bought them at the Chinese supermarket so they were gutted and cleaned already. I scorned the meat with a knife and placed it in a bowl of milk, just enough to cover the milk. Leave it to soak overnight or a couple of hours if you can at least! Hey presto… the preparation is over.
Let’s move onto the next step. Take 3 cups plain flour + 1 cup corn flour. Mix this together on a tray (I find this is the easiest for rolling the squid in). Add salt, pepper, a little chilli powder and garlic powder, if you like.After the squid is finished chilling in milk, place it on a chopping board and using a sharp nice, slice the squid into thin rings. Try not make them too thick as itll take longer to cook and too thin isn’t nice either. About 1cm in width is ideal.
Be careful not to overcook, they should only take 1-2 minutes or until the batter turns a light golden brown colour. Scoop them out and place on kitchen towel to dry off excess oil. The batter will be crispy and light while the squid itself is soft, rubbery and delicious.
